Truffle Paste>>

This delicious paste is made from a combination of mushrooms
and white or black truffle. Traditionally truffles come from Alba but they
also grow in other areas of northern and central Italy. Its taste is quite
unusual but veryversatile. It matches well with pasta
dishes, rice, red meat, and excellent with game!

Truffle omelette

Ingredients:
4 persons 8 eggs
30gr grated cheese
200gr white Truffle paste
1 teaspoon of butter
Salt and freshly crushed black pepper
chopped fresh parsley for colour

Method:
Beat the eggs slightly in a bowl, add the cheese the Truffle paste and

the parsley. Heat a non-stick frying pan with oil and some butter, pour
the egg mixture in the pan and cook veryquickly. Take care not to overcook, but rather leave the
omelette of a soft consistency. With a little extra Truffle paste add some oil and drizzle on top of
omelette for a more intense taste.
