Gentile Linguine Artisan Pasta
Just outside Naples is Gragnano, a small town with a big reputation. Gragnano is widely acknowledged as the birthplace of dried pasta.
Gentile is one of a small handful of producers in Gragnano who are still producing pasta using the same traditional techniques that this town became famous for.
Hard durum semolina is extruded through bronze dies so it has a scruffy, rough surface, perfect for holding sauce.
It's dried at low temperatures for three to four days, depending on the shape, which gives it vastly more flavour and a chewier texture.
